Depends how i feel some days bread crumbs some times just a lil flour others i make a monteiths summer ale batter Egg white 1/3rd cup cornflour 3/4 cup of flour and add beer slowly to make it a consistant mix similar to pancake mix
what ever takes your fancy has to have alot of salt. fish is bland without it. I usually just put fillets in flour then fry in a little olive oil and butter. While cooking salt both sides as they cook and most importantly rest the fish as you would a steak or roast from the oven before serving. For me this means putting the fish on a plate in the oven to keep warm at 100 degrees while I finish the rest of the dish be it chips or what ever.
