I was shown a very different method years ago in Brazil and was just wondering how you guys do it
Pretty easy really and no bones to get in the way cos of only having the main backbone. Just run the knife down each side above the bone and there you go. Trim off any yuck bits like the belly flap.
So you fillet the fish like any other? No main differences? Thanks
Only difference is no pin boning required. I tend to cut through the fillet again in the middle once off if it’s a particularly fat fillet. Very sharp knife a necessity.
