what ever takes your fancy has to have alot of salt. fish is bland without it.
I usually just put fillets in flour then fry in a little olive oil and butter. While cooking salt both sides as they cook and most importantly rest the fish as you would a steak or roast from the oven before serving.
For me this means putting the fish on a plate in the oven to keep warm at 100 degrees while I finish the rest of the dish be it chips or what ever.
